DUCK!!!! eggs

As some of you may know, we started selling eggs at the farmers markets this year. Our flock is not huge, so we sell out very fast.*no so fun fact - Illinois imports 65% of the eggs we consume. SIXTY FIVE PERCENT* Along with the very delicious, deep yellow and orange yolked chicken eggs we have, we also bring duck eggs to market. I have run into a few "What the heck do I do with a duck egg?" questions so I thought I would take to the web and share a few ideas.

"Duck eggs taste like chicken eggs, only more so." The yolk is much bigger than a chicken egg and is the main reason they make such egg-cellent (sorry - I couldnt help it) fresh pasta. Do you like eggs benedict?? If so then prepare thyself for duck egg benedict. Its almost too good....almost. Their large creamy yolks are higher in protein than chicken eggs so they are also very Keto friendly. All in all they are great source of taste nutrition and I urge you to give them a try.
