As some of you may know, we started selling eggs at the farmers markets this year. Our flock is not huge, so we sell out very fast.*no so fun fact - Illinois imports 65% of the eggs we consume. SIXTY FIVE PERCENT* Along with the very delicious, deep yellow and orange yolked chicken eggs we have, we also bring duck eggs to market. I have run into a few "What the heck do I do with a duck egg?" questions so I thought I would take to the web and share a few ideas.

Their large creamy yolks are higher in protein than chicken eggs so they are also very Keto friendly. All in all they are great source of taste nutrition and I urge you to give them a try.
